Dig out a trench and set the tubers in place with the sprouts pointing upwards. Cover with some of the soil from the trench.

As the plant grows cover with more soil so that only the top 3 inches of growth is above the soil. Cover over one more time to fill the trench back up with soil.

Harvest the new tender potatoes, 2 to 3 weeks after the plants flower or leave until the plant yellows and dies back to obtain a larger crop.
